Salmon and Penguin ‘Tales’ from The Bakery!

The Great British Food Awards in 2020 saw our Summer Isles Salmon pie receive the prestigious accolade ‘highly commended’ in the Savoury Bakes and Pie category.  This was especially pleasing as the judge was none other than Raymond Blanc, Chef and Owner of Le Manoir aux Quat’ Saisons.

Commendations such as this give cause for celebration for the Brockleby’s team and for our hand-chosen suppliers and producers. The ethos we follow of ‘food provenance’ continues to be rewarding. Our choice of ingredients make the pies extra special and so enjoyable for our customers.

Our Fishmonger is Stuart Scarborough in Melton Mowbray.  Stuart has been in the business for over twenty years with his wife Jayne. Together, they run Scarborough Fare. Stuart is quite a personality locally. We know him not only for his excellent fish but also for playing The Dame each season at Melton Theatre’s Pantomime!

Scottish Salmon

Joking aside, Stuart sources Scottish grade A salmon for us from two low density stock Scottish farms.  The fish are typically three to four years old mature fish which give a greater density and flavour than can be found from their Norwegian counterparts. Each week we use approximately twenty kilograms of Scottish salmon. We marry it with a deliciously delicate white sauce and fresh broccoli to make our special large and small Summer Isles Salmon pies.

Smoked Haddock

Our fish loving pie enthusiasts will know that we also hand make a Penguin Pie! They will know that this pie contains the favourite food of the penguin: haddock! In the case of a Brockleby’s pie, smoked haddock which we pair with tasty cheddar cheese and English potatoes! The fish are mature line caught haddock from sustainable stock in the North East Atlantic sea. Stuart delivers them from the quayside to the specialist Grimsby smokery. Here they are cold smoked creating an undyed natural smoked haddock. Once he has skinned and pin boned them, he delivers the fish to us at the Bakery.

Stuart operates a doorstep delivery service and you will find him at the local markets in Leicestershire, Nottinghamshire and Lincolnshire. He of course also serves wholesale accounts such as Brocklebys.  If you reach his voicemail when you plaice (pun intended!) an order, Stuart’s rendition of the English Folk Song ‘When The Boat Comes In’ is your reward! What a character he is!!!
